The Best Simple Chicken Curry

Ingredients
- 1 lb Chicken Breast, cut into cubes
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 tbsp Curry Powder
- 1 can (14 oz) Coconut Milk
- 1 tbsp Olive Oil
- Salt and Pepper to taste
Instructions
- Heat the olive oil in a large pan or wok over medium heat.
- Add the chopped onion and garlic. Sauté for 2-3 minutes until soft.
- Stir in the chicken pieces and cook until browned on all sides.
- Stir in the curry powder and cook for 1 minute until fragrant.
- Pour in the coconut milk, add salt and pepper.
- Bring to a simmer, then reduce heat and let it cook for 15-20 minutes, or until chicken is cooked through.
- Serve hot with rice or naan bread.
