The Best Simple Chicken Curry

This is the best and simplest chicken curry you will ever make. It’s fast, delicious, and perfect for anyone new to cooking.

Ingredients

  • 1 lb Chicken Breast, cut into cubes
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Curry Powder
  • 1 can (14 oz) Coconut Milk
  • 1 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Heat the olive oil in a large pan or wok over medium heat.
  2. Add the chopped onion and garlic. Sauté for 2-3 minutes until soft.
  3. Stir in the chicken pieces and cook until browned on all sides.
  4. Stir in the curry powder and cook for 1 minute until fragrant.
  5. Pour in the coconut milk, add salt and pepper.
  6. Bring to a simmer, then reduce heat and let it cook for 15-20 minutes, or until chicken is cooked through.
  7. Serve hot with rice or naan bread.
